What are fats and oils?

Fats and oils, protein and carbohydrates are the main energy yielding nutrients found in food. Each of these nutrients is necessary for good health. Protein provides amino acids, carbohydrates - starches and sugars. The fatty acids are either polyunsaturated, monounsaturated or saturated.

What's different about the fatty acids?

The difference relates to their structure. All of the fatty acids have a unique structure which influences what they look like, what role they play and what function they perform in the body.
  • The structure of saturated fatty acids reduces the ability of the liver to remove cholesterol from the blood and tends to raise blood cholesterol levels.
  • The structure of polyunsaturated fatty acids increases the ability of the liver to remove cholesterol from the blood and is likely to assist in lowering blood cholesterol.
  • Monounsaturated fatty acids are likely to assist in lowering blood cholesterol.
